Potato Starch is a fine powder which is extracted from the starch found in potatoes.Potato starch is sometimes confused with potato flour which is different, flour is made from the entire potato and is much more dence or "heavy". Potato starch cannot be used as a direct substitute for regular flour, a 50 % ratio to wheat flour has worked for me, but yeast breads don't rise so well-I think I'll try adding some xantyhan gum.I'll let you know.
In baking use potato starch in breads and cakes to add moistness, or to soups or stews to thicken your broth.
Here is an alternative flour recipe using potato flour and rice flour as its base I've been trying out, you can substitute this for wheat flour
4 cups Rice flour
2 cups powdered cannabis
1 cup Tapioca flour
2 cups potato starch
3 Tablespoons xanthan gum
Tip; store your alternative flour mixes in an air tight container in the refridgerator.
